Here is my Sweet Potato Pie Recipe

(makes two pies)

Boil sweet potatoes in skins for 45-50 minutes or until soft

Rinse potatoes in cold water and remove skins

Mash skinned sweet potatoes

Combine mashed sweet potatoes with remaining ingredients

Mix with hand mixer or mixmaster into a smooth, consistent mixture

Pour mixture into the two Pillsbury crusts

Cover edges of crusts with strips of aluminum foil

Bake at 350 for 40 minutes

Remove foil strips and continue baking 15 additional minutes or until knife comes out clean

(total baking time is 55 minutes)
